We set out to create a better kind of protein snack.

After years of prioritising health, performance, and consistency, we realised something was missing from the shelves. There were plenty of “high protein” options — but very few made with truly simple, trustworthy ingredients.

So we built what we wanted to eat ourselves.

Saltbush Organics exists to deliver premium Australian beef, minimally seasoned and traditionally air-dried — nothing unnecessary, nothing artificial. Just a clean, powerful snack designed to support active lives.

Born in the Kitchen

Meet James, one of the founders.

With an active routine and a focus on staying sharp and energised throughout the workday, he wanted a high-protein snack that didn’t cause energy crashes or afternoon brain fog.

Frustrated by artificial jerky and sugar-loaded protein bars, he bought a dehydrator and began experimenting in his own kitchen.

The early batches were shared with friends and family. Then colleagues started asking for more. What began as a weekend side project quickly turned into something bigger — a commitment to raising the standard of protein snacking in Australia.

A lot has evolved since those first batches, but the core principle remains: keep it simple, keep it clean, and make it exceptional.

Our biltong is made using only honest ingredients: premium Australian organic grass-fed beef, sea salt, vinegar, and spices. That’s it.

The Beef Behind It

We source 100% Australian organic, grass-fed beef from trusted farms across NSW and QLD.

Our cattle are raised on open pastures, free to graze naturally. The beef contains no added hormones, no antibiotics, and no GMOs.

Quality in equals quality out — and we don’t compromise at the source.

What Makes Biltong Different?

Biltong is often compared to jerky, but the process — and the result — are fundamentally different.

Traditional jerky is typically cooked at high temperatures and often contains added sugars, marinades, and preservatives to extend shelf life. Biltong, on the other hand, is air-dried slowly and naturally. It isn’t cooked, and it doesn’t rely on artificial ingredients to create flavour or texture.

Because of this slower drying process, biltong retains more of the meat’s natural character. The result is a tender, flavour-rich cut of beef that delivers high protein without unnecessary carbohydrates or additives.

It’s simple. It’s traditional. And it’s real food.
